Summer is finally here -- and with a furious hello -- starting out with a heat wave in week one! Well, here's a tasty, healthy and refreshing fruit salad for you, something I picked up while surfing in Byron Bay, Australia. Simple, easy-to-make and hearty too. A Papaya Yogurt Salad, topped with a bit of honey. Makes for a great breakfast or light lunch! This is all you need:
Several scoops of plain low fat yogurt in a bowl or scooped dish
Add as many slices of fresh papaya as you'd like
Top it with a bit of orange blossom honey (or your favorite choice of honey).
And for those who want some extra protein, or those hungry for more,
Add a generous sprinkle of chopped hazelnuts on top of it all!
And for those who want some greens as well, start off with a bed of Arugula (or Rocket as they say Australia) as the foundation (before adding all the ingredients above).
Then Enjoy! A definite yum-yum summer fun!

You can hardly pick up a paper or view the news from whatever source, without being barraged by stories regarding the lack of nutrition, the 'new and improved' diet which will shed pounds in no time at all, the ubiquitous ads for the 'Ab-Lounger', 'Bow-Flex' ads that will make you look like Charles Atlas, 'Weight-Watchers' which will make you slim, 'Jenny Craig', that will transform you into a run-way model, and the beat goes on. (I took literary license with descriptions of those companies mentioned. They may not say what I said, but it's what they imply.)

I am convinced that locally grown produce is the tastiest. As a salad eater, I always try to get produce from the farmers market when I can. My husband and I visited Israel in February. One of the biggest surprises on our trip was the Israeli’s love of salads. Every morning, our hotel had a huge buffet for breakfast. We were shocked to see the huge display of salad every morning…for breakfast! The other surprise was the freshness of the vegetables in the salad. We heard that most Israeli produce is locally grown in the country, mainly in the kibbutzes. We were so impressed.

Let's face it, cancer has got a grip on this generation. Pretty much everyone I know has lost or known of someone who has lost a loved one to this brutal disease. I read sometime ago that it's been long known from research and studies that a healthy, vegetarian diet over time can reduce the risk of cancer, though this isn't something made well known by the medical community at large. My husband and I love salad. We live in New York City and have salad practically everyday with lunch and/or dinner. We love simple, tasty salads with fruits and nuts.
We are concerned that today’s children are being raised on a diet of junk food.
My husband and I were just at Zabar’s the other day, a popular eatery on Manhattan’s Upper Westside. Zabar’s is a high-traffic, open-seating styled café, with bar-like tables and stools and a motley bunch of people coming and going. You order at the counter and sit wherever a seat presents itself.

My husband and I sat on two stools at the oblong, conference-like table in the center. Some families with children were there. I couldn’t help but notice what the children were eating...
