Summer is finally here -- and with a furious hello -- starting out with a heat wave in week one! Well, here's a tasty, healthy and refreshing fruit salad for you, something I picked up while surfing in Byron Bay, Australia. Simple, easy-to-make and hearty too. A Papaya Yogurt Salad, topped with a bit of honey. Makes for a great breakfast or light lunch! This is all you need:

Several scoops of plain low fat yogurt in a bowl or scooped dish
Add as many slices of fresh papaya as you'd like
Top it with a bit of orange blossom honey (or your favorite choice of honey).

And for those who want some extra protein, or those hungry for more,
Add a generous sprinkle of chopped hazelnuts on top of it all!

And for those who want some greens as well, start off with a bed of Arugula (or Rocket as they say Australia) as the foundation (before adding all the ingredients above).
